Crushers Smoked Pork Butt

Rub the pork.  Rub pork with 1 Bottle of truck Sauce, 1 cup of brown sugar. Let the pork butt Marinade in the fridge overnight 8 hours at least. 

  1. Fill spray bottle.  Fill with a 1:1 ratio of apple juice and apple cider vinegar and set aside.  You’ll be spritzing the pork every 2 hour for the first 4 hours.
  2. Smoke pork.  Add pork shoulder to smoker grate and smoke at 250°F for 4 hours.  Each hour, open up the smoker and spritz pork. I recommend using Maple wood, but Hickory or Apple will work as well. 
  3. Wrap the pork.  Spritz pork one more time, then wrap with foil or peach paper.  Return to smoker and smoke at 225°F for approximately 4 more hours.
  4. Check temp.  Pork should have an internal temperature of between 195-205°F.  
  5. Let pork rest.  Remove pork from smoker and keep pork wrapped while it rests for 20 minutes or up to 2 hours. Enjoy.

This recipe will make you hate your DFAC, Sorry, not sorry. Make Well, Enjoy.

Ingredients

3 large eggs 

2 tablespoons of Truck Sauce 

2 tablespoons of Olive Oil

3 Corn Tortillas

2 oz yellow Onions 

2 oz Green Peppers 

1 oz red tomatoes 

1 oz Parmesan Cheese or to taste.

 

Directions

1. Heat a non-stick pan over high flame. Add 1 tablespoon of olive oil, onions, peppers, and Tomatoes. Sautee until they begin to sweat, then add in eggs and parmesan cheese and Truck Sauce. Once cooked set aside.
2. In a separate pan add olive oil and 3 tortillas cook until you notice browning. Once desired consistency is achieved set aside.
3. Place tortillas one a place and place Trail eggs on Top. Add additional Truck Sauce and parmesan cheese to taste. Enjoy.

  • In a large stockpot, combine the warm water, the rub, curing salt and brown sugar. Bring to a boil over high heat, stirring to dissolve the salt . Let cool to room temperature. 
  • INGREDIENTS
    • 1 Gallon warm water
    • 1 Cup salt 
    • 1/4 cup of brown sugar
    • 1 bottle of Truck Sauce 
    • 4 turkey legs
  • Add the turkey legs to the brine, making sure they're completely submerged. Refrigerate for 24 hours, then remove the turkey legs and discard the brine. 
  • When ready to cook, set Smoker to 250 degrees.
  • Add Turkey legs to Smoker and baste with Crushers Truck Sauce throughout out the cooking process.
  • Insert the probe into the thickest part of a turkey leg, avoiding touching the bone. Lay the turkey legs directly on the grill grates. Close the lid and smoke until the internal temperature reaches 165℉ and the turkey legs are deeply browned, 4-5 hours. Don't be alarmed if the meat under the skin is pinkish; that's a chemical reaction from the cure and the smoke.
  • Serve immediately. Enjoy

Ingredients

  • 2 tablespoons all-purpose flour 
  • 2 tablespoons Salt
  • 2 pounds of chicken wings and drumettes (see Note)
  •  4 tablespoons Truck Sauce 
  • 2 tablespoons unsalted butter

Method

  • Step 1 Preheat the oven to 500°. Line a large baking sheet with foil and spray with vegetable oil. In a bowl, mix the flour with the salt. Add the chicken and toss to coat. Spread the chicken on the baking sheet or grill in a single layer and spray with vegetable oil. Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.  
  • Step 2 In a bowl, toss the chicken wings with the Truck Sauce.

INGREDIENTS    

  • 2 Tablespoons Italian dressing 
  • 1/2 tsp. ground chipotle pepper 
  • 1 1/2 lbs. cod fillets or other firm white fish fillets
  •  1/4 cup mayonnaise 
  • 1/2 Cup Truck Sauce
  • 1 Tbsp. lime juice 
  • 2 cups shredded green cabbage 
  • 2 Tbsp. chopped fresh cilantro optional 
  • 12 corn tortillas 

Method 

Combine dressing with chipotle chile pepper in small bowl; reserve 2 tablespoons. Pour Truck Sauce over cod in large resealable plastic bag; turn to coat. Close bag and marinate in refrigerator 30 minutes. Meanwhile, combine mayonnaise, lime juice and 2 tablespoons reserved dressing mixture in medium bowl. Stir in cabbage and cilantro, chill, if desired. Remove cod from marinade, discarding marinade. Grill or broil cod, turning once, 15 minutes or until cod flakes with a fork. To serve, arrange cod in tortillas, then top with cabbage mixture, and Truck Sauce.

Ingredients 

  • 1 (4-pound) whole chicken
  •  2 tablespoons extra virgin olive oil or other vegetable oil 
  • 1 (12-ounce) can beer, room temperature, opened and half-full 
  • 1 bottle Truck Sauce 
  •  2 tablespoons chopped fresh thyme leaves, or
  • 1 tablespoon dried thyme 
  • 1 tablespoon black pepper  

Method 

Marinade chicken in one bottle of Truck Sauce for at least 3 hours prior to prep. Prepare the grill. Mix the salt, pepper, and thyme in a little bowl, and rub it all over the chicken.   Lower chicken onto half-filled beer can: Make sure the beer can is open, and only half-filled with beer (drink the other half!) If you want, you can put a sprig of thyme (or another herb like rosemary or sage) in the beer can.  Lower the chicken onto the open can, so that the chicken is sitting upright, with the can in its cavity.  Grill on indirect heat:  After an hour, check the chicken and refresh the coals if needed (if you are using a charcoal grill).  The meat thermometer inserted into the thickest part of the thigh needs to read 165°F.  A 4-pound chicken will usually take around 1 1/2 hours.  Enjoy.

1 cup leftover turkey 

1/2 Cup diced onion

1 stalk of celery

4 cherry tomatoes

Chop all ingredients and saute in a pan using olive oil. Place on a roll, add Truck Sauce to taste, Enjoy.
